Mommy gained a lot of weight this fall and winter, so now she need to lose some (many) of pounds. It is always extremely difficult to take first step for better, but I did one from tenth attempt…I will share with you how hard I try and if it goes well.) Last year I tried Atkins diet for a week and continued with non carbohydrate dietary, so I’ve lost about 25 pounds for 2 months. Heh, now again should start from scratch. What’s a pity!, and it even not because I ate a lot, I ate SWEETS a lot, baked a lot and consumed what I baked a lot. Got a lesson! As I said, I tried , and tried, and tried to start dieting again, and just can’t. But the last one I remained and it is my fifth day and I lost my first 2.5 pounds only….The good thing about Atkins diet, you are not hungry at all. You can eat boiled chicken breast and veggies and fruits, but nothing else. Yes, sounds good, but not for me who has a sweet tooth.OK, no sweets, OMG! On seventh day you can add some dairy products, like milk to your coffee and a couple of spoons of yogurt, yolk of boiled egg. When the first week would pass, you become proud of yourself and will not give it up.))) Hope so!!!!!
I make my cottage cheese from Greek Yogurt, put it on the freezer to 1 night, in the morning take it out to defrost, and before dinner just turn over can with yogurt on the strainer and let the liquid to drip. Liquid I put in the boil, add 2 eggs,1/2 teaspoon of salt, 1/2 teaspoon of baking soda, 2 teaspoons of sugar, 2 tablespoons of oil, 2 cup of milk,and I do not measuring the flour, just add it until it’s thick enough, but easily flow. Put my frying pan on stove, hot it, pour oil( 1 tablespoon),spread it by silicon brush, take big spoon and pour our dough and turn frying pan to let it seat evenly. Fry pancakes from both side, store them on a plate. Sometimes I put sugar on the pancake, sometimes not, after that put cottage cheese, wrap it as envelop and put on frying pan with oil for couple minutes from both sides, to make them crispy. They are so tasty. Serve them and pour honey or jam to final temptation and call family to eat.)))
Oh, this is truth! Usually I bake my bread in bread-maker, and what a taste of it! mmm…I tried a dozen different recipes and this one really awesome. Some times I modify my bread into sweet bread, but this time I would like to share my favorite, easy- peasy, just 1 hour, no knead at all bread. I’ve bought my bread machine at St. Vincent De Paule community store just for $10 or $15, and love so much my small helper. I use Five Roses flour, and Fleischmann’s quick rise instant yeast from Bulk Burn.
My Favorite Bread
Rapid / 2 Lb / Dark / 1h.10 minutes
1 & 1/4 warm milk, 3 tablespoons of sour cream, 1/2 teaspoon of salt, 3 teaspoons of sugar, 3 tablespoons of batter, 3 & 1/4 cups of flour, 4 teaspoons of yeast.
Just put one after another as it is in the recipe. Well done! That’s easy.
